Method
Cake:
- Preheat the oven to 325°F (165°C). Heavily coat a large bundt pan with non-stick cooking spray.
- In a large bowl, combine all the cake ingredients except the lemon lime soda. Mix on medium speed for 2 minutes using an electric mixer or mix by hand.
- Slowly add in the lemon lime soda, mixing for 1 minute until incorporated. The soda may fizz a little, so add it gradually.
- Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
- Remove the cake from the oven and allow it to cool in the pan for 10 minutes before removing it from the pan.
Icing:
- In a bowl, whisk together powdered sugar and lemon lime soda until it forms a smooth icing.
- Drizzle the icing over the cooled cake.
- Garnish with lemon and lime zest.
