Blueberry Sauce:
- In a small saucepan, combine frozen blueberries, fresh orange juice (excluding the reserved 2 tbsp), orange zest, honey, and cornstarch.
- Place the saucepan over low heat and simmer gently.
Blueberry Waffles:
- In a large bowl, whisk together milk, Greek yogurt/sour cream, eggs, and melted butter.
- Add flour, baking powder, salt, and sugar to the wet ingredients. Mix until just combined; do not overmix. Fold in frozen blueberries.
Cooking Waffles:
- Preheat your waffle maker and lightly spray with non-stick cooking spray.
- Pour ¼ cup of batter onto the waffle maker and cook until done or until desired doneness is achieved.
- Finishing the Blueberry Sauce:
- Lightly mash the blueberries in the sauce with a fork.
- Mix the reserved 2 tbsp of orange juice with 2 tsp of cornstarch, then whisk into the sauce.
- Remove the sauce from the heat.
Serving:
- Top the cooked waffles with butter, blueberry sauce, and syrup.
