Cook the Veggies:
- Heat 2 Tbsp of oil in a large pan over medium heat.
- Add the sliced bell pepper, onion, mushrooms, and jalapeno to the pan.
- Season with salt, pepper, garlic powder, and onion powder to taste.
- Cook for about 5 minutes or until the veggies are soft.
- Remove the veggies from the pan and set aside.
Prepare the Chipotle Mayo:
- While the veggies are cooking, add the mayo, chipotles in adobo, and water to a blender.
- Blend for about 20 seconds or until the mixture is smooth.
- Set it aside.
Cook the Beef:
- In the same pan, add another 1 Tbsp of oil.
- Spread the shaved beef in a single layer in the pan.
- Cook without touching for 2-3 minutes to create a sear.
- Season with salt, pepper, garlic powder, and onion powder to taste.
- Flip the beef and cook for another 2 minutes.
- Break the meat into smaller pieces using a spatula.
Combine and Melt Cheese:
- Add the cooked veggies back into the pan with the beef.
- Toss everything together to combine.
- Turn the heat to low and place the slices of cheese on top of the beef and veggie mixture.
- Let the cheese melt.
Assemble the Sandwiches:
- Hollow out the hoagie rolls.
- Spread a generous amount of chipotle mayo inside each roll.
- Fill the rolls with the cheesy beef and veggie mixture.
Serve and Enjoy:
- Serve the loaded Philly cheesesteaks hot.
