Trim fat from chicken thighs and place them in a large bowl.
In another bowl, whisk together Greek yogurt, grated garlic, lemon zest and juice, olive oil, red wine vinegar, garlic powder, oregano, onion powder, salt, and black pepper to make the marinade and sauce. Adjust seasoning to taste.
Add half of the sauce to the chicken and massage it in. Let the chicken marinate for 20 minutes. Meanwhile, chop up any vegetables you plan on using for the wraps.
Preheat air fryer to 400 degrees Fahrenheit. Once preheated, add chicken in a single layer. Cook for 15-20 minutes or until the internal temperature reaches 165-175 degrees Fahrenheit. Discard any leftover marinade.
Remove chicken to a cutting board once finished cooking. Let it rest for 5 minutes, then slice into strips.
Assemble wraps by adding chicken, your favorite toppings, and some of the sauce onto each tortilla.
