Pre-heat oven to 375°F.
Cook the sausages according to package instructions until almost done. Set aside to cool.
In a medium bowl, whisk together the eggs, creamer (or heavy whipping cream), nutmeg, cinnamon, vanilla, and maple syrup.
Roll out the croissant dough with the wide end facing you.
Brush the inside of each croissant with the French toast mixture using a pastry brush.
Place one sausage link on the wide end of each croissant.
Roll the dough around the sausage to form a pig in a blanket.
Brush the tops of the rolled croissants with more French toast mixture.
Place on a baking sheet and bake for 10-12 minutes, or until golden brown.
Sprinkle with powdered sugar and serve with maple syrup.
