Crock-Pot Roast and Carrots

Savory roast recipe is a comforting and hearty meal perfect for family dinners. The seasoned and seared chuck roast is slow-cooked with carrots and onions in a savory broth until fork-tender. Served over creamy garlic mashed potatoes with brown gravy, it's a satisfying and easy-to-make dish.

Ingredients
  

  • 3 lb chuck roast
  • Salt pepper, and garlic powder (to taste)
  • 5 large carrots peeled and chopped
  • 2 large onions quartered
  • 1 cup beef broth
  • 1 packet of your favorite pot roast seasoning mix
  • Avocado oil
  • 1 packet brown gravy mix
  • Garlic mashed potatoes prepared separately

Method
 

Season the Roast:
  1. Season both sides of the chuck roast generously with salt, pepper, and garlic powder.
Sear the Roast:
  1. Heat a large pan over medium heat with a drizzle of avocado oil.
  2. Sear the chuck roast for about 5 minutes per side or until golden brown.
Prepare the Crockpot:
  1. In the crockpot, whisk together 1 cup of beef broth and the pot roast seasoning mix until well combined.
Cook the Roast:
  1. Place the seared chuck roast into the crockpot.
  2. Add the chopped carrots and quartered onions on top of the roast.
  3. Cook on low for 6-8 hours or on high for 3-4 hours, until the meat is fork-tender.
Finish and Serve:
  1. Once cooked, shred the roast into chunks directly in the crockpot.
  2. Prepare the brown gravy mix according to the package instructions.
  3. Serve the pot roast over garlic mashed potatoes, drizzled with brown gravy, and a side of toast if desired.
