Ingredients
  

  • 2 large chicken breasts cut into strips
  • 4 Tbsp avocado oil divided
  • 1 Tbsp chili powder
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp oregano
  • 1 tsp cumin
  • ½ tsp cayenne pepper
  • ¼ tsp sugar
  • 2 bell peppers sliced
  • 1 onion sliced
  • 8 oz freshly grated Pepper Jack or Mozzarella cheese
Optional Sides:
  • Flour tortillas
  • Sour cream
  • Salsa

Method
 

  1. In a large bowl, combine the chicken strips with 2 Tbsp of avocado oil and all seasonings, mixing until evenly coated.
  2. Heat the remaining 1 Tbsp of avocado oil in a large skillet over medium heat. Add the seasoned chicken and cook until fully done. Remove chicken and any juices from the pan.
  3. In the same pan, add the sliced peppers and onion. Sauté until softened.
  4. Return the cooked chicken to the skillet and toss everything together.
  5. Reduce heat to low. Sprinkle grated cheese on top and cover the skillet with a lid. Let cook for 3-5 minutes, or until the cheese is melted and bubbly.
  6. Serve hot with optional sides like flour tortillas, sour cream, and salsa.
