Whisk together all the ingredients for the BBQ sauce in a container.
Refrigerate until ready to use.
Clean and trim any skin or fat from the chicken thighs. Add them to a large bowl.
Toss the chicken with oil and blackening seasoning. Let the chicken marinate while preparing other ingredients.
Toast the buns and cook the bacon. Reserve a couple of tablespoons of the bacon grease.
Sauté the onions in the reserved bacon grease until they are soft and caramelized.
Cook the marinated chicken in the reserved bacon grease over medium heat. Flip the chicken every 45 minutes until it reaches an internal temperature of 160°F.
Top each piece of chicken with 23 slices of bacon, sautéed onions, and a slice of provolone cheese. Cook until the cheese melts.
Place the chicken on a toasted bun and top with a generous amount of Alabama BBQ sauce.
