Method
- In a deep pot or wok, over medium heat, add 1 tablespoon of oil. Add shrimp and cook for 3 – 4 minutes. Remove and set aside.
- Add 1 tablespoon of oil and cook your shells, shallot, garlic, ginger, and chili paste. Cook till shells are pink, about 4 minutes. Add in your green onion and cook for another minute.
- Turn your heat down and pour in your water. Just enough to cover the shells. Bring to a simmer and cook for 30 minutes.
- After 30 minutes, strain your broth through a fine mesh strainer. Add broth back to the pot and add heavy cream.
- Taste your broth and adjust seasoning.
- Pour over the top of your favorite noodles and ramen toppings!
